The famous Taiwanese chef was just one of the prominent figures the Boragó chef won over on his recent tour
How did the Chilean chef Rodolfo Guzmán win friends on his East Asian tour? With a 13-hour barbecue, that's how! The Boragó chef began slow roasting a whole lamb on a traditional Latin American asado cruciform stake at 3am on 20 January, in preparation for a special dinner event at André Chiang’s RAW restaurant in the Taiwanese capital.
Lucky guests included key journalists from the national press, as well as Youtube influencers, and leading local magazine editors. On 22 January, Guzmán flew on to Hong Kong to meet representatives from the South China Morning Post and Tatler, among other outlets.
On 23 and 24 January chef Rodolfo and acclaimed local chef Richard Ekkebus hosted Phaidon’s sixth four-hands dinner collaboration, at Ekkebus’s Amber restaurant at the Landmark Mandarin Oriental, currently ranked 24 on the World’s 50 Best Restaurants list.
Ekkebus and Guzmán prepared two stunning meals for a total of 140 guests, including local culinary star and forthcoming Phaidon author Matt Abergel, of Hong Kong’s hotly tipped Yardbird restaurant.
Finally, Rodolfo rounded off his trip with a cookery seminar; sharing his culinary knowledge with 50 students enrolled at the International Culinary Institute.
