Rice Pudding

Preparation: 5 minutes
Cooking: 25 minutes
Serves: 6 people
Ingredients:
4 cups milk
½ vanilla bean, split
Scant 1¼ cups short-grain rice
½ cup superfine sugar
Method:
Bring the milk to the boil in a pan with the vanilla bean, then add the rice.
Cover and simmer gently for 20 minutes, or until tender.
Remove from the heat, discard the vanilla bean and gently mix in the sugar with a fork.
Serve warm or cold.
